Wasting Away in (Vegan) Margaritaville

Taco Tuesday is undoubtedly the best day of the week behind Friday. Growing up my favorite weekly family dinner was Taco Night. I loved our family taco night so much that whenever I return home from college Tacos are always on the menu for dinner. Age permitting, the combination of a taco and a margarita is the best way to end your Tuesday. In this week's blog post I will be featuring my go-to vegan taco recipe.

This recipe is a high protein meal and can be modified to a low carb meal as well. Tacos can be seen as an unhealthy meal however, veganizing this meal turns it into a whole food meal filled with nutrients and delicious flavors.

Ingredients:

  • Seitan

  • 1 can of organic Black Beans

  • 1 Red Bell Pepper

  • 1 Green Bell Pepper

  • 1 cup Mushrooms

  • Red Onion

  • 1 tablespoon chili powder.

  • 1/4 teaspoon garlic powder.

  • 1/4 teaspoon onion powder.

  • 1/4 teaspoon crushed red pepper flakes.

  • 1/4 teaspoon dried oregano.

  • 1/2 teaspoon paprika.

  • 1 1/2 teaspoons ground cumin.

  • 1 teaspoon pink Himalayan Salt

  • Lettuce

  • 2 Avocados

  • 1 Tomato

  • Salsa

  • Vegan Cheese

  • Tortilla (Optional can also do taco salad)

Preparation (10 minutes)

  • Combine the seasonings into a small dish.

  • Dice the half of the red onion,red pepper and green pepper and place them into a bowl. Add avocado oil and seasoning.

  • Remove Seitan from package and break up block into smaller pieces. Add avocado oil and seasoning.

  • To prepare the guacamole: Take 2 avocados, a tomato, and the remaining half of the red onion. Mash the avocado to your desired consistency then mix in diced tomato and red onion.


Cook Time (12 minutes)

Step 1: Heat avocado oil in a large cast-iron pan over medium heat.

Step 2: Add the seitan to the pan and cook for 4 minutes.

Step 3: After 4 minutes add the vegetables and black beans. Lower heat and cover. Cook for another 6 minutes.

Step 4: While the filling is finishing cooking get the rest of your fillings ready and have your tortilla warmed.

Step 5: Fill tortilla with desired fillings

Step 6: ENJOY
